Sirloin Steak with Fresh Tomato Sauce

Ingredients

small boneless beef sirloin steaks pounded to 1/4- inch thick
|

|
Salt to taste
|
|
|
|
Pepper to taste
|
|

ripe tomatoes, peeled and chopped coarsely
|
|

Tablespoons |
olive oil, divided
|
|
4 |
cloves |
garlic, sliced
|
|
1/2 |
teaspoon |
dried oregano
|
|

Fresh chopped basil or parsley to taste
|
|
Directions:
Season steaks with salt and pepper and set aside.
Cook tomatoes, 1 Tbsp olive oil, and garlic until tomatoes are soft and begin to give off their juice. Add oregano and fresh basil (or parsley) and simmer.
In a separate pan, heat remaining 1 Tbsp olive oil and saute steak to the desired stage of doneness.
Spread the tomato sauce over steaks, cover the pan and heat for about 3 minutes longer. Serve immediately.
